Ensuring safe food from production to consumption means understanding where risks are in your production. Hurdle technology is a method of ensuring that foods maintain a level of quality and safety from production to consumer. Hurdle technology usually works by combining more than one approach, including production changes and formulation decisions. These approaches can be thought of as "hurdles" the pathogen has to overcome. The right combination of hurdles can ensure a quality product during shelf-life.
